Chocolate Peanut Butter Balls

If your valentine loves chocolate and peanut butter then these are the perfect cookies to make for him or her. They are a favorite with my family and friends….and they are easy to make.

In large electric mixer bowl, beat peanut butter, margarine and sugar on medium speed until thoroughly combined. Add KELLOGG’S RICE KRISPIES cereal, mixing thoroughly.

  • 1 cup crunchy peanut butter
  • 1/4 cup margarine or butter, softened
  • 1 cup powdered sugar
  • 2 cups Rice Krispies®

Portion mixture, using rounded teaspoon (I use my 1 Tablespoon scoop and make them level, and then roll them). Shape into balls.  Refrigerate.

The original recipe calls for putting them into mini muffin papers and pouring 1 teaspoon of the chocolate on top of each of the balls, but I like to use chocolate melting wafers and dip them and then place them in the papers.   My favorite is the Ghirardelli dark melting wafers.

 

Once the chocolate sets, I place them in the papers and store them in an airtight container in the refrigerator.

Our niece doesn’t like chocolate, so I use the white chocolate melting wafers on some and my husband liked them better than the dark chocolate.

Either way they are winners…..and you can enjoy them any time of the year.
